Can anybody help me with Gluten Free recipes?

Can anybody give me some fantastic gluten free recipes for an Afternoon Tea sort of thing? I’m having a 12year-old girl over for a cooking afternoon, and she has celiac disease. We want to bake something like cookies and a fancy cake with coffee.
It needs to be fun and exciting! (preferably something that she can take home aswell)

Some advice –
How long has she been GF? Factor that in.
Ask her and her mom what she would like.

And If you don’t have experience cooking Gluten Free – get pre-made mixes to use.
The Chemistry of cooking gluten free can be tricky (have you ever used Xanthum gum before ….or does she like the taste of garbonzo bean flour or chestnut flour better) Again – Get a pre made mix.

Pamela’s is a brand that I have great luck with. It tastes great and produces tasty things.
There are also many recipes on their website….I use the pancake mix to make blueberry muffins & strawberry and banana bread that are all great. Pamela’s also makes cake mixes too.
The GF Chocolate cake mixes are usually better than the GF vanilla’s.

Some gluten free stuff can taste like sand…trial and error work best…to find a brand you like.
But I can tell you Pamela’s is great and it’s sold at Kroger’s and amazon.

Have you ever made pasta…I mean homemade noodles. That is a fun activity…but again I would reccomend using a mix. I’ve had good luck with Pamela’s bread mix to make noodles – just use it like you wold semolina and find an eg noodle recipe you like. It’s messy and very involved and lots of fun – but it’s not as “proper” as tea. But it tastes great and i;v not met a kid that doesnt love to make noodles….. Hand cut strips of taglitelle are best mmmmmmnnnn.
Good with a Meatsauce or Chicken Noodle soup.
